Master Your PFE-800 & PFG-800: The Ultimate Control Panel Guide

Setting up your commercial pressure fryer correctly is the secret to consistent, juicy fried chicken. Whether you are using the electric PFE-800 or the gas PFG-800, the computer control panel allows you to automate your cooking process.

In this guide, we will walk you through the Single-Segment (Basic) setup and introduce the Multi-Segment (Advanced) mode based on the official Tenshine manual.

🔧 Quick Start: Entering Program Mode

Before you begin, ensure the machine is connected to power. You can adjust settings whether the machine is ON or OFF.

  1. Access Settings: Press and hold the 'P' button for 2 seconds until the panel displays PROG.

  2. Enter Password: Input the default password 123 to unlock the system.


 

🛠️ Part 1: Single-Stage Setup (Standard Mode)

 

This is the most common setting for frying standard items like chicken legs or wings.

Step 1: Choose a Product Channel Select a number from 1 to 0 (e.g., Position 3) to save your recipe. Press 'P' to confirm.

Step 2: Name Your Product Use the Up/Down buttons to select letters (e.g., "ABCD" or "CHICK"). Press 'P' to next.

Step 3: Set Preparation Time (Optional) This is the countdown before the basket drops.

  • If not needed, set to 0.

  • Example setting: 5 seconds. Press 'P' to confirm.

Step 4: Set Frying Time (Critical) Set the total cook time.

  • Recommendation for Chicken: 8 minutes 30 seconds.

  • Press 'P' to next.

Step 5: Set Temperature Adjust to your target oil temperature.

  • Recommendation: 165°C (approx 330°F).

  • Press 'P' to next.

Step 6: Pressure Mode Decide if this cycle uses pressure.

  • Select YES for pressure frying (Broasted style).

  • Select NO for open frying.

  • Press 'P' to next.

Step 7: Finalize & Save

  • Alarm: Set a reminder alarm (e.g., 10 seconds) for when cooking is done.

  • Idle Mode: Press 'P' to skip through load compensation settings until the end.

  • SAVE: Press and hold 'P' until you hear a long beep. Your settings are now saved!


 

🚀 Part 2: Multi-Stage Setup (Advanced Mode)

 

Want crispy skin with a tender center? Use Multi-Stage cooking to change temperature or pressure during the fry cycle.

How it works (Example):

  • Stage 1: 12 minutes at 165°C with Pressure YES (Cooks the meat).

  • Stage 2: 3 minutes at 170°C with Pressure NO (Crisps the skin).

  • The machine automatically releases pressure before Stage 2 begins.
